Coles Greek Prawns with Fetta
Australians LOVE prawns! And the Coles prawns are just fantastic to cook with. Either buy pre-peeled (thank you Coles J!), or peel your own. Please note that most prawns are snap frozen on the trawlers as soon as they’re caught, so don’t freeze any prawns you buy, without checking that they haven’t already been frozen. Enjoy!
Serves 4 as part of a banquet.
- 25 large green prawns
- 100gm Greek feta cheese, roughly crumbled
- 4 spring onions, finely chopped
- 1-2 cups of Mutti Passata
- 3 cloves of garlic, peeled and chopped
- 3-4 stalks of oregano leaves, leaves removed and chopped
- Splash Ouzo OPTIONAL
- Good splash Olive Oil
- Salt & Freshly Ground Pepper
- ½ tsp MasterFoods Chili Flakes (optional)
Prepare all ingredients.
Peel the prawns, leaving tails on. Devein.
Over a high heat, heat olive oil in a large sauté pan.
Add the prawns and turn once when coloured (about 1-2 minutes).
Add the spring onion, garlic and sweat for 30 sec.
OPTIONAL - Take the pan off the heat, add the Ouzo, tip the pan towards the flame and flambé. (NB. Hold your arm out straight and don’t look over the pan!).
When flames have died down, add the oregano, chilli flakes and tomatoes and lower the heat to medium.
Working quickly, add HALF of the crumbled feta, salt, pepper and bubble just till the feta starts to melt. 1 min maximum.
Taste and season with more salt and pepper if necessary. Be careful with salt as the feta is naturally salty.
Garnish with some of the remaining feta and maybe some shallots.
